惠比須餅舖創立於1899年（明治33年/民國前12年）至今已有百年歷史，【惠比須】是日本七福神之一的財神爺，即象徵財源滾滾而來之意。惠比須的元祖名產—餡子芋 (此名稱乃由日文直接翻譯，即現在俗稱之花蓮薯)。當時歷經了三年的研發才製造出來，成品全是用餡製造而成，無外皮的包裹，而餡的原料則是甘藷，後來成為花蓮的特產，俗稱花蓮薯。此產品於大正及昭和年代曾多次獲得日皇之獎賞﹐因而成為當時進貢日本天皇的貢品，至今仍保有多面獎牌及獎旗。本店目前除了生產餡子芋外，另有花蓮芋、粟餅﹙ 糬﹚，沙琪瑪、 糬餅、紅糯米 糬、鳳
